I would like to announce that I, yes...get ready.... have chopped an onion this morning! I know, I know, I can hardly believe it myself. And to tell you the truth it wasn't all that bad. I mean, it was pretty bad - but it was do-able. All in the name of chicken and sasuage cassoulet. I found this recipe in my slow cooker book and I thought it sounded soooo yummy. A cassoulet (I thought I would let you in because I had to google the definition) is a slow cooked bean casserole or stew containing meat that originated in the southwest of France. There are several regional variations but all contain white beans, duck or goose, meat and sasuages. Anyhoo, the point is that I chopped an onion and gosh darnit and that cassoulet better be darn good for it!
